Keto recipes without the salt

Twenty-eight keto recipes - 8 breakfasts, 10 lunches, 10 dinners - every one under 10 g net carbs per serve. Written to the same rule as the rest of this site: no added salt.

What makes these different: most keto cooking leans on bacon, stock cubes, cured meat and processed cheese, and the sodium adds up fast. None of those appear here. Flavour comes from fat, acid, spice and browning. Carbohydrate figures are net carbs - Australian composition data reports available carbohydrate, so fibre is already excluded.

Read this before you start

A ketogenic diet is not right for everyone, and it is not suitable if you have cirrhosis or advanced liver disease. In cirrhosis, glycogen stores run down quickly overnight and the body starts breaking down muscle for energy, which is why clinical guidance recommends regular carbohydrate through the day and a carbohydrate-containing snack before bed — the opposite of what a keto diet does. Keto is also not recommended in pregnancy, in type 1 diabetes, or if you take medication for diabetes or blood pressure without your doctor adjusting it first.

  • Spinach 50 g
  • Cheddar 30 g
  • Black pepper to taste
  • Butter 12 g

Method

  1. Wilt the spinach in half the butter, tip it out, wipe the pan.
  2. Beat the eggs hard with pepper - air is what makes it tender.
  3. Melt the rest of the butter, pour the eggs in, draw the edges to the centre.
  4. Spinach and cheddar over one half while the top is still glossy. Fold, rest a minute.

Method

  1. Dry-fry the halloumi in a hot pan until it takes colour both sides. Set aside.
  2. Mushrooms into the same pan with the butter, cooked hard until browned.
  3. Rocket on the plate, mushrooms over it so the leaves wilt slightly.
  4. Halloumi on top, lemon over everything.
